The cod is salted directly on the fishing boat, immediately after being caught. Upon returning to shore, it is dried and matured. In the small artisan factory "Papa Anzóis" in Algarve, excess salt and skin are removed, and the fish is gently steamed, preserving its natural flavor and texture.

The cod is preserved in golden organic extra virgin olive oil (EVOO) from the Alentejo region, north of Algarve, which gives the fish an exceptional taste and aroma. The authentic factory in Parchal, Algarve, produces each batch adhering to traditions and the highest quality standards.

All ingredients – from the fish to the olive oil – are carefully selected, often locally sourced, ensuring exceptional quality and an authentic Portuguese taste in every can. The natural characteristics of the raw materials mean that each batch may vary slightly, further emphasizing the product's authenticity and artisanal production.
